Caelan's career has taken him through some of Australia's leading restaurants and internationally to Hong Kong, where he refined his craft in a Michelin-starred yakitori restaurant. His experience also includes Brazilian-Japanese cuisine, contemporary Japanese restaurants, and produce-driven Modern Australian kitchens.

Drawing from these diverse influences, Caelan has developed a distinctive style that combines Japanese precision with the vibrant flavours of South East Asia and South America.
